What is it?A Knife Sharpener
not a knife grinder and so will not damage the knife. It was developed for and is still used in the meat processing industry.
How does it work?
At the heart of the machine are 2 small butchers' steels, the same hardness, temper and cut as a professional steel. The steels are pre-set at the optimum edge angle and are spring loaded so as not to damage the knife. The steels revolve under tension and do not wear away the blade. To sharpen any knives just run the blade between the steels four or five times as if slicing bread. The base has holes which allow the sharpener to be secured to a surface for even safer sharpening and to ensure it's easy to find in a busy kitchen.
Will it sharpen any knife?
Yes, Plain, Serrated or Scalloped edged, carbon or stainless steel. Really blunt knives may require a more vigorous action.
Who designed the Classic?
Robert Welch. The classic is found on permanent exhibition in New York Museum of Modern Art as a sixties design classic.
